Radio pudding is autumn at its best, with a cozy fire, and a comforting helping of this childhood favourite. This recipe is from the "Barbour Cookbook".
  • CAKE:
  • preheat oven 350. degrees
  • 1 cup all-purpose flour
  • ½ cup white sugar
  • 1 teaspoon soda
  • 2 teaspoons cream of tartar
  • ¼ teaspoon salt
  • ½ cup raisins
  • ½ cup milk
  • ½ teaspoon vanilla
  • SAUCE:
  • ½ cup brown sugar
  • butter size of a large walnut (copied from original recipe)
  • 2 cups boiling water
  1. Combine the flour, white sugar, soda, cream of tartar, salt, raisins, milk and vanilla, and pour into an 8"x8"x2" pan or 9"x3" oven proof bowl. The batter will be thick.
  2. Mix the sauce ingredients together and pour ( without stirring into the batter) over the cake using the back of a large spoon to distribute the sauce evenly.
  3. Bake for 35-40 minutes or until golden and the center is firm to the touch. Once the pudding is removed from the oven it will immediately deflate a bit.
